Legitimately a good question, I have no clue

It may make more sense to say when the egg is born. When humans are born premature, they may need a hospital room as their "egg" until they're old enough to leave. Since zodiac signs are almost always based on birth date, I would guess being born as an egg would count as the bird's "birthday". I once had the idea I could figure out my real birthday by looking at my personality and a zodiac sign. Unfortunately, I don't know how successful that effort would be, but it's fun to think about
